Cooking apples are primarily for cooking rather than eating as dessert apples, which are eaten raw. Generally larger and tarter than dessert varieties.
They can be cooked down into sauce, apple butter or fruit preserves. Also, baked in the oven and served with custard, made into pies or apple crumble. Apple sauce is a good accompaniment to roast pork.
