There are only 6 marrow bones in a beef carcase, they are different sizes and if you’re lucky you’ll get the one with the knap bone on it. That’s the bone from the hindleg which has a tendon on it. Once simmered down for a long time, very slowly, this makes the best broth full of goodness and flavour.
