Brisket is a rectangular shaped muscle from the bottom of the shoulder on the Aberdeen Angus beef animal. It works hard as the animal grazes around and so needs long slow cooking. Its got bags of flavour and plenty of fat around it and running through it for great flavour. It’s a really versatile cut and can be a pot roast, a neatly portioned braising dish, slow cooked and shredded as pulled beef over salads and rolls.
